Green Sweet Potato Smoothie
This green sweet potato smoothie gets its vibrant green color from the fresh spinach in it.
But don't be fooled, it won't taste like spinach.
No, the delicious flavors of sweet potato and mango blend harmoniously together for an incredibly delicious smoothie, it won't even feel like you're eating healthy.
And the dash of cinnamon will bring out the rich flavors of fall and this will soon be a top competitor to the pumpkin spice drink of choice.
Seriously, it is that good!
Can you use sweet potato in smoothies?
Of course, you can!
I like to cook my sweet potato first to bring out its rich flavors and to help ensure a smooth texture in your smoothie.
Sweet potatoes are healthy, inexpensive and easily available.
And it is crazy healthy for you.
Sweet potatoes are a root vegetable that are full of vitamins and minerals including iron, calcium, B, C and selenium.
They also are full of fiber and antioxidants which our bodies desperately need to function in tip-top shape!
Can you blend sweet potato?
Yes, you definitely can blend a sweet potato, and with a high-powered blender, you don't even need to cook it.
However, I prefer to cook my sweet potatoes first before adding them to a smoothie to ensure a very smooth smoothie.
What do I use to make a green sweet potato smoothie?
There are many blenders you can use for making smoothies and milkshakes, but I personally own the Vitamix 780 and think it is simply the best.
I get smooth, consistent results every single time which is exactly what I want for all my smoothies and this is also perfect for some milkshakes if you want everything blended together well!
You can buy your own Vitamix 780 HERE.

Green Sweet Potato Smoothie
Ingredients:
- ½ Sweet Potato, cooked, peel off
- 1 cup Mango, frozen
- 1 Banana
- 2 handfuls of Spinach
- 1 cup Coconut Milk
- ½ teaspoon Cinnamon
- Ice, if needed
- Hemp Hearts, optional
- Fresh Mango Slices, optional
Directions:
- You will want to begin by cooking your sweet potato. I like to use a fork to puncture the skin a few times and then put it in my microwave for about 5 minutes or until it is fork tender.
- After your sweet potato is cooked, the peel will come off easily.
- Place ½ sweet potato and all of the other ingredients in your blender.
- Blend on high until thoroughly combined.
- Add ice and blend until smooth if needed for temperature and consistency (ice can thicken your smoothie bowl up a bit and make it cold).
- Pour it into a glass.
- Top with hemp hearts and fresh mango slices if desired.
- Enjoy cold!
